Chex Mix Recipe

The kids were at each other's throats today about, well, anything and everything. So to break the tension I was busy keeping them busy with projects and activities. One of our activities after lunch was making Chex Mix to eat after their naps. I saw a recipe in Hy-Vee's weekly ad, but as usual, needed to put my own twist on it. I like to call it Chex Mix with Kids because naturally, we couldn't follow the exact instructions or that would have been pandemonium.

Chex Mix with Kids Recipe:
4 cups Rice Chex
4 cups Chocolate Chex
1 cup pretzels
1 stick of butter
1 cup of packed brown sugar
1/4 tsp baking soda
1/4 cup of light corn syrup

In a microwave safe bowl, add Chex and pretzels. In another microwave safe, add butter, brown sugar, and corn syrup. Melt together in microwave for 2 minutes. Stir and add baking soda. Add mixture to the Chex and pretzels, stir until coated. The original recipe calls for the mix to be put in the microwave for 4-5 minutes, but.....I was doing this with kids and they freaked when I tried to put it back in the microwave. So, ours only went in for 1 minute and was just fine. If you do microwave, let stand until cool and then add M & M's. Keep in an air tight container.


Definitely the pick me up the kiddos needed this afternoon! Despite the not microwaving it for the full 5 minutes, the Chex mix was delicious, extra gooey and sticky, and tasted like caramel and chocolate. It was a wonderful combination and the kids loved it! I will definitely be keeping this recipe for those "special treat" kind of days.
